Regarding the actual girsa in Onklos, the one printed in chumashim is unreliable for almost anything.  The Teimani is more reliable, since they read it every Shabbos, and it has the infinitive, just as RaShY did.

As a methodological point, the targumim often rewrite pesukim idiomatically.  The way a targum phrases a particular pasuk does not necessarily indicate how they understood the grammatical structure, especially in a case such as this where the grammar is unambiguous.  Therefore, just because our printed Onkelos has "v'tisvin", it does not mean that he actually understood the grammatical form as meaning "you will take".
