As I indicated in my last comment. the Kuf is not Me-akev. The whole idea behind leaving the kuf out is that the Eidim are supposed to witness the Kinayn Sudar that Chasan makes on the Kesuba. Once that happens the Kuf is filled in. But there is no Shtar w/o Eidim. (Eidm Chasumim Al HaShatr Naaseh K'Mi Shenechkaru B'Bes Din.). It is the Eidm that validate it and nothing more.
I discussed this with RAS's, son - R' Eliyahu - who is a Baki in all his father's Teshuvos and he corroborated this.
