Indeed it is OK, and there is a service <http://kesuba.org> that will do
it for you, all but the signatures and the foot of the kuf in
"vekanina".

Not only is what R' Zev says true - one does not even need the word Kanina to be missing the Kuf. It can all be pre-printed. What makes the shtar valid is the signature of the Eidim. Or the handing over of it by the groom to the bride witnessed by Eidim (Eidei Mesirah Karti).
