[Mesorah] suffix for a family: "uni" vs. "oni"

This is standard in Hebrew.  Cf. a parallel case, ‘oz, but with a suffix ‘uzzo.
And the answer is the reverse: u is original, but changes to o without doubling. Doubling was lost at word end, unlike in Arabic

Why would the doubling change an "o" into an "u"?
