The plain answer is that Gershon is really Gershunn, with a double nun, which disappears at the end of the word.  When a vowel is added to the end, the doubling comes back, and so it is Gershunni.  This not like Z'vulun, where the nun is not hiding any doubling.

In P'Pin'chas (happy birthday, R'Micha :)), the family of Shimon is "Shimoni," the family of Chetzron is "Chetzroni," and even the family of Z'vulun (name ends with "un" rather than "on") is "Z'vuloni."  Why is the family of Geir'shon "Geir'shuni" and not "Geir'shoni"?  Thanks.
