There is an opinion(and I'll try to find the source) that that if the cooking process does not actually affect the wine/grape juice, making it noticeably inferior, it cannot be touched by a non-Jew. According to this opinion it probably applies to grape juice, which cannot be produced w/o cooking/pasteurizing, and many other flash cooked wines.<br>
