To me, this is based purely on practical considerations, aka convenience,
or how people naturally tend to perceive when their day begins and ends.
My proof (and imho this is a great example of "the exception proves the
rule") is that although daily siddurim do indeed begin with the morning,
machzorim (and that includes Shabbos-only siddurim) universally begin with
the evening.
