One clear difference between the Rambam and the Ramban is the value of miracles as evidence; see H. Yesodei HaTorah 8:1 vs. Toras HaShem Temimah Ed. Chavel pp. 146, 150, 152, etc.

I think the explanation is hinted at in the Ramban in Shoftim you cited.  The Rambam holds that miracles are ad hoc, but the Ramban holds that miracles also follow laws and those laws echo creation.
