I think your question only works if we believe that davening and learning
operate on the same axis. Then we can rank which is bigger / further along
that axis. And so, if learning is the greater mitzvah, why would it pay to
interrupt learning for davening?

IIRC there's a tshuva by R' Moshe where he's asked about younger kids interrupting limudei kodesh to say tehillim and he answers affirmatively. Perhaps R' DE can supply the source (all my sfarim are piled away for some clean up in my basement so I can't access the Yad Moshe :-)
