Wouldn't this be just as "bad" as poultry in terms of resembling meat, and thus subject to an issur de-rabanan? Why would it be? We had the same thing with beef fry when it first came out reassembling bacon. Or any of the synthetic hamburgers. There is no prohibition with them.
