I don’t know about matzoh ovens specifically in the time of Chazal, however, as a tour guide with an archaeological bent I know that pottery was fired well over a thousand years earlier at temperatures of at least 900C (~1600F). So they were certainly capable of reaching such temperatures if so desired.
